A port is a fortified wine. It originated in Porto, Portugal, and it remains one of the most beloved styles in the world for good reason. Understanding how port is made helps you appreciate every sip, whether you are new to fortified wines or a longtime fan.

How Port Is Made

Port is made by adding a neutral grape spirit, or brandy, during fermentation, which stops the fermentation early. This leaves some natural grape sugars in the wine, making it sweeter and raising its alcohol content to 18 to 22 percent ABV.

Port can also be made from a dry finished wine by adding brandy and sugar to achieve the same results. Either way, it is always best to age a port in a barrel for some time to create oak character on the nose and palate.

What are wine tannins all about? If you have ever felt that dry, grippy sensation in your mouth after a sip of red wine, you have met tannins. They are one of the most important building blocks of a well made wine, and understanding them will change how you taste.

Where Tannins Come From

The tannins in wine come from the grape skins, stems, and seeds. As winemakers, we really just want the skin tannins. The other two are bitter and undesirable.

Tannins also come from oak. These tannins will be present in the wine if the wine is aged in oak barrels.

Why Only Red Wine Has Tannins

Only red wine has tannin, because of the skin contact during fermentation. White wine does not have tannins because white wines are fermented as juice with no skin contact.

What Tannins Do in the Glass

Tannins give wine mouthfeel and structure. Too much tannin will give you what we call cotton mouth, a sensation that is very dry and aggressive on your palate. Not enough tannin in a red wine will diminish the quality of the wine.

Alcohol is a necessary part of red and white wine. Besides causing a "happy feeling," the alcohol is part of a balanced wine with structure and mouthfeel. Here is how it gets there, and how a winemaker keeps it in check.

It Starts With Sugar in the Grapes

As the grapes ripen, the sun and heat help the sugar in the grapes to increase. The more sugar in a grape, the higher the potential for alcohol.

How the Winemaker Measures and Manages It

The winemaker will measure the sugar in the grapes to determine how much alcohol will be created in the wine, as the yeast eats the sugar and converts it to alcohol and CO2.

Single varietal wines are wonderful, but when you blend wines together, they can become great! Blending is one of the most creative parts of winemaking, and it is where a winemaker's judgment really shows.

Why Winemakers Blend

As you blend wines, you take the best qualities of each wine and combine them together to become more complex and interesting. Usually blends are made to create a better wine.

And then there are times when we blend wines to improve a sub-par wine, using another wine to add missing color, tannin, structure, or fruit.

Blends Do Not Always Work

Just remember, blends don't always work. Adding Malbec to a Cabernet Sauvignon could make the Cabernet Sauvignon worse. You may have to try blending in a Merlot instead.

Getting the Percentages Right
